This Week's Meal Plan [scratch-made or starter-helped]

Mike and I have learned to go with the flow at our house.  Up until 7 months ago, there were 5 people living in this house.  What did that mean?  Nothing was ever really clean, you were never really alone, and time in the kitchen was at a minimum.  We learned to cook very quick meals and get out of there!  We never made fully frozen or pre-prepared meals, but usually had some help with some boxed meal-starters.  Now that we're by ourselves, we're trying to branch out and make some from-scratch meals, but, to be honest, we're about 50/50.

On Sunday nights, we throw our meal plan together with the awesome Pinterest-inspired meal board I made, and Mondays after work, we grocery shop together.  

I really like the way we do things.  We cook meals together and never spend too much time in the kitchen on any given week.  On average, we cook 5 nights a week, eat leftovers a 6th night, and have some sort of plans [dinner out, dinner with parents, etc.] on the 7th night.

Here's what we're eating this week:

Monday: Chicken Fried Rice
All you need is Rice A Roni Fried Rice, 1 pound chicken, 2 eggs, 1 cup peas.  I follow the "chicken fried rice" on the back, but instead of cooking the chicken in the rice, I cook it with a little Soy and Teriyaki sauces.  Total prep and cook time: 30 minutes

Tuesday: Lasagne Bianca
Full recipe here.  Total prep time: 1 hour and cook time: 30 minutes

Wednesday: Shrimp Scampi
All you need is a package of Gorton' frozen shrimp scampi and linguini.  Simply boil the linguine, cook the scampi in a large saucepan, and mix the two together.  Top with parmesan cheese, if you wish!  Total prep and cook time: 20 minutes

Thursday: Butternut Squash and Chicken Soup

Sunday: Homemade Pizza
We get the dough from Bertucci's, some cheese, and jarred sauce, and pop the pizzas in the oven at 350 for 12-15 minutes or so!
