hi, have you met ted? [my week]

pretty good week here in connecticut.

happy birthday, dr. seuss! ...and yes, i wore this for a whole day while teaching.
mike and dave's birthday party! (more about this later)
calzone adventures! mmm chicken, bacon, & ranch
hellooooo, uconn!

now we are relaxing, drinking some andre, and watching how i met your mother.  we just finished girls vs suits and are now onto the pilot.  what a show, dare i say it's legen....wait for it... dary.

happy 26th birthday, mike!

happy birthday to my best friend and boyfriend! i feel so lucky to spend his birthday weekend with him.  we had a very fun party last night, spent today relaxing together, tonight with his family, and tomorrow we are going adventuring to the uconn!

aunt zena's famous chocolate cake

In preparation for my boyfriend, Mike's, and my other roommate, Dave's, birthdays, I made cupcakes using my great aunt's famous recipe.

They are so delicious!

Ingredients:
2 cups sugar
1 3/4 cups flour
3/4 cups Hershey's cocoa
1 1/2 teaspoons baking powder
1 1/2 teaspoon baking soda
1 teaspoon salt
2 eggs
1 cup milk
1/2 cup vegetable oil
2 teaspoons vanilla extract
1 cup boiling water

Directions:
- combine all dry ingredients (sugar-salt in ingredients) and mix by hand
- add eggs, milk, oil, and extract and mix on medium for 2 minutes
- stir in boiling water (the batter will be very thin)

For cake: bake at 350 degrees for 30-35 minutes in 2 9-inch pans (greased and floured)
For cupcakes: bake at 350 degrees for 22-25 minutes in cupcake liners filled 2/3 of the way

October 2014 update: for an even richer taste, try using Hershey's Special Dark Cocoa Powder!
