Cocktail of the Month: Bahamian Blue Runner

It's never too early in the morning to read about a cocktail, right?  When we were on our honeymoon, we had so much fun with all of the Sandals drinks.  When we got back, we went straight to the package store and bought all of our new favorite liquors and mixers to make our own.  After a couple of months, we've finally come up with a favorite.  It comes our favorite parts of three of the drinks: white rum and pineapple juice (from the Bahama Mama), blue Curacao (from the Caribbean Blue), and dark rum, creme de banana, and blackberry brandy (from the Rum Runner).  As you can imagine, with five different kinds of alcohol, this one will throw you for a loop (but you'd never know it with all of its deliciousness).  You can definitely adjust these proportions to fit your taste buds, but we love this because it's not too sweet, and you can really taste every flavor.
Ingredients (for a pair of drinks):
2 oz dark rum
1 oz white rum
1 oz blackberry brandy
1 oz creme de banana
1/2 oz blue curacao
4 oz pineapple juice
maraschino cherries to garnish
Directions:
In a shaker with ice, combine all liquors and pineapple juice.  Shake and pour into two glasses.  Garnish with cherries and another splash of pineapple (or cranberry) juice, if you'd like!

All Up In My Grill: Smithfield® Marinated Pork

This post is part of a social shopper marketing insight campaign with Weave Made Media®, Smithfield®, but all my opinions are my own. #weavemade #SummerSizzling http://my-disclosur.es/RgFrEH

There's no doubt that summertime and grilling go hand in hand, but by mid-July (with a grilling season in South Carolina that's almost year-round), Mike and I are pretty sick of hotdogs and hamburgers on repeat.  But they're just so easy any day of the week!  We are definitely a fan of simple meals, and who has time remembers to marinate their meat in the morning?  Not us.

While recently at Walmart, we found our new go-to: Smithfield® Garlic & Herb Marinated Fresh Pork Sirloin.  It's already marinated; how awesome is that?  With all of the meat prep taken care of, all we needed were five additional ingredients to make a full meal.
Ingredients:
- Smithfield Garlic and Herb Pork Sirloin
- Pineapple
- Red pepper
- Jalapeño
- Lime
- Honey
Directions:
1. Preheat grill.
2. Slice sirloin into three or four portions and place on grill.
3. While the pork is cooling, slice the pineapple, bell pepper, and jalapeño.
4. When the internal temperature of the pork reaches about 110 degrees, add the fresh fruit and veggies to the grill, as well.
5.  Remove everything from the grill when the pork's internal temperature reaches 145 degrees.
6.  Let the pork rest for about 5 minutes so that it will be juicy and delicious!
7.  During the time the meat is resting, dice up the peppers and pineapple.  Add a tablespoon of honey and the juice from one lime to the chopped ingredients to finish off the relish.
8.  Top the pork with the relish and enjoy!
Seriously - so delicious!! Want to try it for yourself?  You can save $2.00 on any one Smithfield® Marinated Fresh Pork product with this digital coupon offer (while supplies last).

Charleston Eats: Taco Boy

It's been forever since I've shared a favorite Charleston restaurant!  I can't even count the number of times I've gone to Taco Boy since moving here over a year ago, but I always felt like I never took enough photos to put together a post (obviously eating everything in sight way too quickly - lol).  Well, when I got a new phone a couple of weeks ago and was going through all of my old photos, I found a margarita photo here, some nachos there, and all of the photos below.  Anyways, if you are ever in Charleston, I highly suggest Taco Boy.  They have two locations: downtown and Folly Beach, so where ever you are visiting, there is bound to be one nearby.  My favorite things on their menu are the Appetizer Trio (salsa, queso, and guac), chicken quesadilla, and Tempura Avocado taco.  Oh, and don't forget about the pineapple-infused margaritas - yum!
