Island Kielbasa

My husband is the CrockPot master.  He finds the absolute best recipes and is always so gung-ho about making them!  Oh, and on top of that, he's super good at watching tv with me for the 5-6 hours while said recipes cook :)  Well, recently, he found another winner: Island Kielbasa.  No, this recipe is not my own, but I still wanted to share it with you, and he did come up with the idea of serving it over rice as a meal instead of a party appetizer!

You'll need:
2 lbs kielbasa
2 cups ketchup
2 cups brown sugar
1 15 oz can of pineapple chunks
white rice

How To:
1. Slice the kielbasa in thin coins (1/2 inch or so).
2. Place the sliced kielbasa, ketchup, brown sugar, and can of pineapple (undrained) into the slowcooker and mix.
3. Turn the slowcooker onto low and cook for 5-6 hours.  The kielbasa is already cooked, so you are really just making the sauce and warming everything up.
4. Serve over white rice (we love our steamer/rice cooker with jasmine rice!).

That mixture of ingredients sound delicious! That would probably still be good if I subbed some vegetarian meatballs in there! :)

Yum! I never thought to use Kielbasa in the crock pot but this would be so good over rice. I may have to try the same ingredients with meatballs, too ;)

I have made this same recipe but with meatballs! Sounds even better with Kielbasa because that is one of my favorites!!

I love cooking kielbasa but we usually do it on the grill. This recipe is right up my alley though and simple ingredients!! Yumm!
