pappardelle with summer vegetables and ricotta

one day at work last month, i happened to go over to our sister organization for an installation, and i watched this great show, the chew, with my friend and sort-of coworker lindsay.  it is seriously a fantastic show - and how can it not be with clinton kelly and mario batali, among others?!


i was so excited to make it, that i put it on twitter and clinton kelly retweeted me!  
it was seriously cool :)

lindsay came over to have it with me last week, [it was actually during this meal that we decided on our spontaneous ryder cup adventure], and it was delicious!

i'm not even going to bother to replicate the directions because "the chew" did such a fantastic job.

the only thing i added was a pound of chicken.  to make this, i sauteed half a shallot and a clove of garlic in a tablespoon of butter for about 2 minutes then added the chicken in strips on medium for about 10-15 minutes.  it was a nice addition!

great entertaining recipe because it you cut everything up beforehand, once your company arrives, it only takes about 10-15 minutes to prepare.

ohhhh my goodness that looks good! Sitting here at work, waiting to go home to dinner. This is not helping! I really hope my husband has this dish right here already made for me. I'm really hoping ... I'll let you know. :) Found you over on Allie's blog!
