irish car bomb cupcakes

so unlike in the past when i have waited until the day of/day after to post holiday themed desserts, i decided to post these ahead of times, in case anyone wants to make them for st. paddy's day on saturday.  guinness chocolate cupcakes, jameson irish whiskey chocolate ganache, and bailey's frosting, how could that not be delicious???

they were so fun to make and took a bit of time, probably an hour or so in addition to baking, but it was well worth it!


guiness chocolate cupcake ingredients:
1 1/2 cups guinness stout
1 cup unsalted butter (at room temperature)
3/4 cup cocoa powder
2 cups flour
2 cups sugar
1 1/2 teaspoons baking soda
2 eggs
2/3 cup sour cream

jameson chocolate ganache ingredients:
8 ounces bittersweet chocolate
2/3 cup heavy cream
2 tablespoons salted butter (melted)
2 teaspoons jameson irish whiskey

bailey's frosting
1 cup unsalted butter (at room temperature)
2 cups powdered sugar
4 tablespoons bailey's irish cream

cupcake directions:
- preheat oven to 350 degrees
- bring guinness and butter to a simmer on the stove in a saucepan over medium heat
- add the cocoa powder to the saucepan and whisk until smooth
- whisk the flour, sugar, baking soda, and salt in a large bowl to combine
- using electric mixer, beat eggs and sour cream on medium until combined
- add the guinness/chocolate mixture to the egg mixture and beat until smooth
- at low speed, add the guinness/chocolate/eggs to the dry mix and mix until smooth
- cook batter in cupcake liners for about 17 minutes

ganache filling directions:
- finely chop the chocolate and place in large bowl
- heat the cream on the stove, in a saucepan, until simmering and pour it over the chocolate
- let it sit for one minute, and then mix until smooth
- add butter and whiskey and stir until combined
-let ganache cool until thick, but soft enough to be piped

how to fill the cupcakes:
-use a 1 inch cookie cutter or the bottom of a large decorating tip to cut holes into the cupcakes
- cut the holes about 2/3 into the cupcakes
- pour the ganache into a piping bag, and fill the cupcakes

frosting directions:
- beat the butter on medium for 3-4 minutes until creamy
- add 1 cup of powdered sugar to the butter and beat on low until combined
- add the second cup of sugar and beat until combined
- add bailey's and mix on medium until smooth and fluffy

i still use plastic bags for some stuff... i need more piping bags!
